- Give the green beans a quick trim on both sides, removing the woody ends so they are clean, crisp and ready to take flavor. Set aside.

- Heat a medium to large size sauce pan on the stove over medium heat. Add bacon and cook until crispy. Remove from heat and place bacon on paper towels to drain leave the grease in pan. Once cooled, chop into bite size pieces.

- Return pan to the stove and place heat on low to medium. Add garlic and shallot stirring constantly to prevent burning until garlic is golden brown and the shallot is translucent (approximately 1-2 minutes).

- Add green beans to pan with bacon grease. Add salt and pepper. Cook for 5-6 minutes if you have blanched the green beans or 10-12 minutes if you have not, tossing regularly to prevent burning.

- Add the real maple syrup and cook for 1-2 minutes, stirring often until it creates a nice glossy maple glaze.

- Add almonds and cook for 1 minute, lightly toasting them to enhance their nutty flavor.

- Add your chopped bacon back to pan. Remove from heat and finish by adding butter, swirling around until melted and evenly coated. Serve immediately.

*At this time if desired you may blanch the green beans. This will help to ensure even cooking and will also lock in the vibrant green color. Directions follow recipe.
*Optional Par boiling instructions
- Fill a large bowl with water and ice cubes, leaving enough room to submerge the beans. Set aside.
- Bring a large pot of water to a rolling boiling and generously salt. Add the trimmed green beans and boil for 2-3 minutes until just tender. (Your will finish cooking them in the sauté).

- Immediately transfer the green beans to the prepared ice bath. Allow to cool for 2-3 minutes.

- Drain well and pat dry. They are now ready to use in the recipe.
